Okay, need some help!

A couple of years ago, I served on the county grand jury, for two and a half years! Yep, once a week, every week for a year, then the second year and the next half we met every other week. Thankfully, I work for the same county, so my pay stayed intact!

Okay, so we've been off jury duty for a couple of years, and the gals still get together every couple of months for dinner! We used to go out, but now we're rotating hosting it, and I'll be hosting in May. Sooooooo......

My job is to provide the main dish(es), one of which needs to be vegetarian. That's where I need the help. Once I come up with a theme, everyone else brings wine, appetizers, side dishes and desserts.

Tonight we had a cheese tortellini dish with a red cream sauce of some sort, and a chicken and mushroom dish. I brought dessert, and I made turtle brownies and apple crisp. I finally messed around with the apple crisp recipe that I had until I am satisfied with it. Appetizers were a platter of meats, cheeses, some tortilla rolls with cheese and pickles, and a fruit platter, with a very tasty Caesar salad. Basic Merlot and chardonnay.

So I'm kind of thinking about a couple of soups: potato leek and a pasta fagioli, and maybe a minestrone. Is a soup dinner a cop out? My first choice would be to put a tri-tip in the smoker, but what about the vegetarian dish? Ponderous! Maybe a nice wild rice and lentil pilaf in a lovely summer squash would be a good vegetarian choice?

Okay, any suggestions for a dinner party would be fabulous! I'll bet my sister-in-law will have great suggestions! She's an awesome cook! Actually, my brother is also an awesome cook!

Hey Corinne! I have a great recipe that a friend made for me, and then I made for another friend... This one keeps getting passed along, it's that tasty! It is a Rachel Ray recipe, and I modified it by leaving out the butter and only put in about 1 cup of cheese total, but you can make it however you want. Here is the web address, but I think you'll have to copy and paste it from here. I also have a really good Soup Au Pistou recipe if you want to go the soup route.

If you click on the link, it should copy the entire thing, but it's called Baked Penne with Roasted Vegetables if you want to do a simple search in foodnetwork.com.

Happy cooking!

And I lied. It's by Giada De Laurentiis, not Rachel Ray. Sorry!

Hey, it's me! Better late than never huh?! This post is too funny because our neighborhood has a "dinner club" that gets together once a month. We rotate houses and it's at our house in May. We also have to make the main dish and everyone else brings sides, apps etc AND there needs to be a vegetarian option. Sounds like we are having the same party in different cities! I was going to make a beef brisket. And for the vegetarian dish, a great stuffed poblano recipe that I have made several times. BUT, the person having the party in April is going to do Cinco de Mayo so not sure the stuffed poblano's are a good idea or not. Pasta is always a good vegetarian option and is also a good side with a meat dish. Can't go wrong there. Another option is a pork tenderloin with Ancho Chile sauce made in the slow cooker. Fall apart tender and spicy yummy. I have a spring pilaf with salmon and asparagus that would work for my vegetarians (they eat seafood) that I might do. I need to think about this some more and get my menu down as well and come up with some more options. I'll keep you posted!!

Ooooh, I just thought of another vegetarian option. I have a recipe for a savory bread pudding. It has red peppers and mushrooms and goat cheese and I don't remember what else. It's yummy! I'll have to keep that one in mind. Who knows what else might pop into my head! I'll let you know!
